Our Story

Why El Pericaso?

Perico means parrot. A bird that brings color to a place. We try to do the same on a plate.

The mascot — the parrot in the cowboy hat with a chain — is our nod to the West Texas border kitchens this food came out of. Family-run, family-fed, four generations of recipes that travel further than we do.

We are not a chain. We are one truck and a small kitchen, and the food shows it. Come hungry, leave happy, talk to the cook. That's the whole pitch.
